Description
Responsible for the development, implementation, and administration of Food & Beverage operations for Chinook Winds Casino Resort. Essential Functions Plans, directs, supervises, and coordinates, work activities for the Food & Beverage departments to include food preparation, food service, banquet and lounge service ensuring impeccable standards and highest level of quality service. Provides leadership, direction, supervision, and guidance to subordinates managing staff in accordance with company culture to promote positive employee morale and performance quality. Oversees the ordering of all food and beverage purchase including food, beverages, supplies, equipment. Selects suppliers and develops effective working relationships. Develops and maintains quality levels of performance and service to ensure exceptional quality, value and presentation of all food and beverage products served to guests. Assist Marketing Department in the development of promotional and marketing plans and ideas to enhance guest activity. Obtains data, evaluates general and specific business conditions and keeps the General Manager advised of such matters. Prepares regular and special reports to management on payroll costs, shift operations, etc. Assists in the development and executes short and long range resort business plans and programs to ensure profits, growth and the expansion of Chinook Winds services. Develops, implements, and maintains the Food & Beverage Departments policies and procedures. Participates in the development, implementation, and evaluation of company goals, objectives, programs, budgets, policies and procedures. Performs regular financial reviews of departments, using the budget, DMRs, and other analytical resources. Responsible for the development and execution of the Food and Beverage Departments budget and reporting requirements. Inspects work performed to ensure that it meets specifications and established company and departments standards. Monitors staff performance to ensure Chinook Winds customer service standards are achieved. Handles all personnel issues in a timely manner according to Chinook Winds policies and procedures. Assesses & resolves situations as they arise ensuring Chinook Winds policies and procedures are enforced. Complies with proper safety precautions, rules, regulations, and practices so that unsafe conditions can be recognized and proper safety protocols implemented. Maintains working knowledge of all Chinook Winds Operations, programs, promotions, events, & services. Ensures the Food & Beverage Departments are in compliance with Chinook Winds policies, NIGA, Tribal policies, State compact and Tribal gaming regulations. Maintains working knowledge of all Chinook Winds Operations, programs, promotions, events, & services. Monitors promotions to ensure compliance with CTSI policies. Maintains knowledge and responsibility for compliance of the U.S. Food Code issued by the Department of Public Health.
Requirements GAMING INDUSTRY EXPERIENCE IS PREFERRED

Previous experience overseeing restaurants, culinary, stewarding, beverage services, banquets and catering, and remote outlets. Computer Skills Microsoft Office Intermediate level in Word, Excel, and Outlook Certificates & Licenses Must be able to obtain Siletz Tribal Gaming License Other Requirements Demonstrated knowledge the laws and regulations governing Food & Beverage preparation and service. |
